It’s officially Holiday Cookie Season and there couldn’t possibly be a better time for me to reboot Foodie Friday!
When I saw this delectable recipe for Oatmeal Cream Cheese Butterscotch Bars on The Food Network (courtesy of Anne Burrell) I knew I just had to make them. And then take pictures of them. Because not only do they look delicious (hello! Look at all that cream cheese!) but they taste just heavenly.
Butter, flour, old fashioned oats, brown sugar, cinnamon, and butterscotch chips are combined to create a scrumptious crumble. Half of the crumble is baked to form a crust. Then a mixture of cream cheese, sweetened condensed milk, lemon juice, lemon zest, and vanilla is spread on top of the crust. Then the rest of the crumble is sprinkled on top. The bars can then be baked, cooled, chilled, cut, and consumed.
The crumble is sweet, buttery, and rich, and the cream cheese filling with lemon zest is fresh, citrusy, and creamy. These bars are just excellent with a latte.
